Coyote Confections Celebrates 1000 Loaves
Anna High School was filled with excitement today as the Coyote Confections team reached a meaningful milestone. The district’s student-run bakery, created through Anna ISD’s special education program and led by teacher Karen Grace, celebrated the sale of its one thousandth loaf of bread. Students marked the moment with music, confetti, and a celebration that reflected the heart of the program.

The one thousandth customer was Assistant Superintendent of Student Services Jennifer Kelley. She stopped by to purchase a loaf and was greeted with a joyful surprise planned entirely by the students. Confetti cannons burst, the high school band played, and guests were treated to cake and a special loaf of confetti sourdough baked by the students. Every person in attendance received a loaf to take home in honor of the milestone.

Coyote Confections originated in Karen Grace’s classroom as a means for students to develop life skills through baking. Staff quickly noticed how much the students enjoyed the process and how successful the bread had become. What started as a simple classroom activity evolved into a student-led bakery that teaches communication, independence, problem-solving, and workplace readiness.

With district support, the program now uses commercial equipment and operates much like a small business. Students rotate through roles that include mixing dough, shaping loaves, baking, packaging, labeling, and greeting customers. They also participate in community events and pop-up sales where they interact with customers who look forward to each new batch of bread.

Today’s celebration honored not only the one thousand loaves sold but also the dedication of the students and the guidance of Karen Grace. Every loaf represents the learning, practice, teamwork, and confidence that have become the foundation of this program. The milestone served as a reminder of the strong sense of connection that grows when students are given opportunities to create something meaningful.

Coyote Confections continues to be a shining example of purposeful learning in Anna ISD. The one thousandth loaf marked an unforgettable moment for the students and for the community that believes in them.
